Mango Chutney

2 Lbs green mangoes (Peeled and thinly sliced)
1 cup seedless raisins
1/2 tsp. salt
11/4 cup apple cider vinegar
1/2 cup sugar
1/2 tsp powdered ginger

Place mangoes in a sauce pan and add salt. Mix well. Add all other ingredients and stir well. Simmer over very low heat uncovered until the mangoes soften and sauce thickens (about 11/4 hours). Pour hot chutney into glass air tight containers and save in a cool place. Serve as condiment with any dish.
