Banana Coconut Ice cream Recipie

Coconut Banana Ice Cream

1 cup sugar
2 cups milk
2 cups heavy cream
2 cups coconut milk
6 egg yolks
2 ripe bananas (mashed)
2 tablespoons vanilla extract
1 cup coconut flakes (toasted)
Pinch of salt


Combine sugar, salt, milk and egg yolks in a heavy sauce pan over medium heat and mix continuously, for about 20 minutes, until the mix thickens (do not boil!).

Remove from heat and whisk in vanilla extract, coconut flakes, heavy cream and coconut milk. Gently combine mashed banana into the mixture. Chill immediately over ice bath. Cover and place in fridge for 4 hours.

Churn in a standard ice cream machine. Serve topped with Fried plantain for African flair!
