How to Clean Fresh Fish
Step 1:
Ensure the fish is fresh! The skin should be slightly slimy, eye must be clear and gills must be have traces of bright red blood.
Step 2:
Using a sharp kitchen scissors, cut into fish from underside of gills, through the abdominal cavity. Remove gills from head and innards from the abdomen.
Step 3:
Using kitchen scissors, cut off all fins off the fish.
Step 4:
Cut fish into desired pieces and place cut pieces in a clean bowl of water. We are cutting up this fish in steak pieces to be used in a soup.
Step 5:
Using fresh cut lemons, rub juice and rind to flesh of the fish to remove the slime. We are using Meyer lemons for this step.
Step 6:
Rinse repeatedly in sink with running water until the slime is rinsed completely off.
Step 7:
Fish is ready for use!
