Goat Meat PepperSoup

1½ lb goat meat (Cut into bite size pieces)
¾ lb beef tripe (cut into bite size pieces)
1 cup red onions (chopped)
2 tbsp. Seafood Bouillon
1 tsp. Thyme leaves
1 cup brown beef stock
1 tsp. cayenne pepper
2 tbsp. pepper soup spice
½ tsp. Utazi leaves (finely chopped)
1 cup chopped smoked dried shrimp (optional)

Rinse meat and tripe. Place in pressure cooker along with onions, bouillon and thyme leaves. Fill with enough water to cover meat by at least 2 inches. Place over medium heat and cook for 25 minutes. Add stock, pepper soup spice, cayenne and shrimp. Stir and check for salt, adding more if necessary. Cook for additional 15 minutes. Add utazi leaves, simmer for 5 minutes and serve topped with fried onions or chopped parsley.
