Vegetable Succotash

1 cup red onion (chopped)
1 cup red bell pepper (chopped)
1 cup zucchini (chopped)
1 cup fresh corn
1 cup green beans (chopped in one-inch lengths)
1 cup red tomato (chopped)
½ cup yellow squash (chopped)
1 ½ cup lima beans
1 tbsp. garlic (chopped)
1 tsp. black pepper
1 tsp. salt

1 tsp. chicken bouillon powder
1 cup chicken stock
½ cup olive oil
2 tbsp. butter

In a pan, heat olive oil and melt butter over medium heat. Add onions, garlic and bell peppers and sauté for about three minutes. Add corn, tomatoes, green beans and seasoning and stir. Sauté for an additional five minutes and add zucchini, yellow squash and chicken stock. Cook uncovered for about five minutes until the zucchini becomes tender. Add lima beans and taste for seasoning. Adjust accordingly. Stir and cook for an additional two minutes. Serve hot.Vegetable Succotash Recipie
